The Netherlands has long been known as a fishing nation, with Urk as its most renowned example. It is here, in the heart of this fishing tradition, that Jōhin originates. On Urk, we craft Jōhin using the same traditional methods that have been practiced in Asia and around the Mediterranean for thousands of years—but with fish from the North Sea. We ensure a fair price for fishermen and adhere to strict European safety standards, all while maintaining a sustainable MSC certification.

Jōhin is made from 100% sustainably caught fresh fish from the North Sea. That’s why some of our products proudly carry the MSC logo. MSC is the internationally recognized standard for sustainable fishing.



Food Safety
Fish fermented for twelve months may sound unusual, but the process is not so different from making cheese or cured sausage. The high salt content protects the fish from spoiling, allowing it to age instead of rot. We closely monitor this process in our dedicated laboratory, adhering to strict European safety standards, including histamine levels.

Ingredients: Water, 25% juice from seaweeds Kombu Royal (Saccharina latissima) and Wakame (Undaria pinnatifida), sea salt, molasses, lime juice, and concentrated onion juice.
Jōhin MSC Fish Sauce Sole
Ingredients: MSC-certified sole (80%), salt.
Jōhin MSC Sweet Fish Sauce
Ingredients: Sole, molasses, salt, concentrated onion juice, and caramelized sugar.
